Soft Taco
Prepare all the condiments beforehand and have bowl with soft taco
shells ready. Cooking the
ground beef doesn't take very long.
- 1/4 lb. ground beef patty, (73% lean is best) thawed and chopped up
- garlic salt as needed for seasoning the ground beef
- 1/2 medium onion, chopped
- 1 oz cheddar cheese, grated
- optional: chopped black olives
- 1/2 roma tomato, diced
- 1 cup lettuce, chopped
- spices for ground beef:
- 1/4 tsp chili powder
- 1/4 tsp dried red pepper flakes
- pinch cumin
- pinch cayenne
- 1 TBL tomato paste or 2 TBL tomato sauce
- dash Frank's hot sauce
- 1/4 cup chicken broth
- 1/2 tsp brown sugar
- dash vinegar
- 2 heaping TBL sour cream
- 2 6-inch soft taco shells or 1 8-inch shell

- Thaw ground beef, crumble, and season with garlic salt.
- Prepare the condiments and have them ready in separate dishes.
Have one or two bowls with soft taco shells already in place.
Have spices, chicken broth, brown sugar, and vinegar ready to use.
- In dry skillet, start browning ground beef on med high.
- Add onions after 3 min when beef grease begins to render.
Sizzle mixture until onions are getting
transparent and beef is beginning to sear. Stir frequently.
- Add tomato paste. Stir for about 1 min.
- Add dry spices and hot sauce. Stir for about 30 seconds.
- Add chicken broth, brown sugar, vinegar. Bring to boil.
Reduce heat.
- Stir frequently. Continue simmering until the meat mixture cooks down to
desired consistency.
Assemble tacos: Spiced beef mixture + cheddar + sour cream +
diced tomatoes + chopped lettuce.
