Fried Rice
- 1/3 cup dry rice
- 1/4 pound of meat (pork or chicken or beef)
- 1/4 green bell pepper, sliced and chopped as desired
- 1/2 onion, chopped
- 2 button mushrooms, sliced
- 1 egg
- soy sauce
- optional: frozen green peas

- Prepare meat: Chop meat into bite-sized chunks and
sprinkle with cooking oil and garlic salt. Refrigerate for
later.
- Prepare veggies: Chop and slice onions, green bell pepper,
and mushrooms. Keep in refrigerator until needed.
- Cook rice using whatever method you're familiar with. I have a
rice steamer which works very nicely. When rice is done, rinse rice
under water, drain, and place in bowl for later.
- Heat about 2 TBL oil in large non-stick skillet. Brown meat and onions,
stirring frequently. About 10 minutes.
- Add rinsed rice. Sautee and brown over medium heat, about 15-20 minutes.
Add additional oil only if pan begins to look very dry. Stir mixture
frequently.
- Add veggies and heat under cover, stirring occasionally, until
veggies are soft. About 5 minutes.
- Add about 1 TBL soy sauce to mixture. Stir for 1-2 minutes.
- Add egg to mixture and stir vigorously to scramble and distribute
egg evenly. About 2 minutes.
- Remove from heat and serve with soy sauce.
