German Potato Salad
- 3 med potatoes - peeled- boiled whole for 25 min
- 2-1/2 strips bacon - chopped
- 1/2 large onion - chopped
- 1/2 tsp sugar
- 1/2 tsp dry mustard
- 1 tsp prepared mustard
- 1/8 cup vinegar
- 1 tsp dry parsley
- salt and pepper to taste

- Boil potatoes - drain - move to large mixing bowl,
chop potatoes
- add 1 tsp vinegar to potatoes, mix lightly, cover
- fry bacon bits in small fry pan until rendered, remove
bits and set aside
- sizzle chopped onions - about 4 min until starting to brown
- add sugar, dry mustard, stir about 30 sec
- add remaining vinegar + 1 TBL water, simmer 3 min to reduce
- combine in mixing bowl - potatoes, bacon bits, sauce, dry
parsley - toss lightly
- cover and chill
