German Potato Salad

  1. Boil potatoes - drain - move to large mixing bowl, chop potatoes
  2. add 1 tsp vinegar to potatoes, mix lightly, cover
  3. fry bacon bits in small fry pan until rendered, remove bits and set aside
  4. sizzle chopped onions - about 4 min until starting to brown
  5. add sugar, dry mustard, stir about 30 sec
  6. add remaining vinegar + 1 TBL water, simmer 3 min to reduce
  7. combine in mixing bowl - potatoes, bacon bits, sauce, dry parsley - toss lightly
  8. cover and chill
