Crock-Pot Beef and Mushroom Stew
- 1/2 lb beef chuck or sirloin - chunked as desired
- 1/2 onion, chopped
- 1/2 tsp garlic salt
- 4 medium potatoes, peeled and chunked
- 1 carrot, peeled and sliced
- 2 mushrooms, sliced
- 1/2 can Cream of Mushroom soup (not diluted)
- 1/2 to 3/4 cup chicken broth
- salt and pepper to taste
- bay leaf (optional)

Add veggies and beef to crock pot.
Spoon undiluted Cream of Mushroom soup over top.
Pour chicken broth over everything.
Cook on low (about 250 deg. F) for 8 - 10 hours.
or, cook on high for 3 - 4 hours.
