Crock-Pot Mushroom Pot Roast
- beef chuck roast - about 1 to 1.5 lb
- 1/2 onion, chopped
- 2 garlic cloves, minced
- 1/4 cup chicken broth
- 4 medium potatoes, peeled and chunked
- 2 carrots, peeled and sliced
- 4 mushrooms, sliced

Start crock pot:
- Add roast + chopped onion + garlic + bouillon to crock pot
- Cover and cook on low (about 250 deg. F) for 4 - 5 hours
Add veggies:
- Add potatoes + carrots + mushrooms, arrange pot so that beef is
on top and veggies underneath
- Cook on low a further 2 hours
Finish veggies in oven:
- Remove potatoes and carrots from crock pot and transfer to
uncovered casserole. Place in 350 degree oven for 20 - 30 min.
Return roast to crock pot, cover and continue on low until veggies
are ready.
Salt as desired and serve with sour cream.
