Chocolate Chip Cookies
Soften margarine overnight in large mixing bowl.
- 1-1/8 cup all purpose flour
- 1/2 tsp salt
- 1/2 tsp baking soda
Combine dry ingredients in small mixing bowl. Sift together.
- 1/2 cup softened margarine (8 TBL)
- 3/8 cup brown sugar
- 3/8 cup white sugar
Cream the sugars into the margarine in the large mixing bowl.
- 1/2 tsp vanilla
- 1 egg
Beat ingredients together in large mixing bowl.
- 1/4 pkg (3 oz) chocolate chips
- optional: chopped walnuts, about 1/4 cup
Add flour mix from small mixing bowl into large mixing bowl
with chips and nuts. Mix together by hand to make cookie dough.
Preheat oven to 375 deg. F. Accuracy is important in cookie baking.
Drop dough on ungreased cookie sheet, about 1/8 cup (1 heaping
TBL) per cookie.
Bake for 8-10 minutes, turning cookie sheet once. Cookie tops should be
domed and just starting to look a little dry on center cookies.

Peanut Butter Cookies
Soften margarine overnight in large mixing bowl.
- 1-1/4 cup all purpose flour
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1/4 tsp baking powder
Whisk dry ingredients together in small mixing bowl.
- 1/2 cup softened margarine (8 TBL)
- 1/2 cup light brown sugar
- 1/2 cup white sugar
Cream sugars and softened margarine in large mixing bowl.
- 1 tsp vanilla extract
- 1/2 tsp mollasses (omit if using dark brown sugar)
- 1 egg
Beat egg and sugars together in large mixing bowl.
- 1/2 cup crunchy peanut butter
- 1/4 cup chopped virginia peanuts
Add flour mix from small mixing bowl into large mixing bowl with
peanut butter and chopped peanuts. Mix together by hand to make cookie
dough.
Preheat oven to 375 deg. F.
Drop dough on ungreased cookie sheet, about 1/8 cup (1 heaping TBL) per
cookie.
With a wetted fork, press tops of cookie drops to a uniform thickness.
Bake for 13 minutes, turning once. Cookies should be a little swollen, but
not too dry looking, and just barely showing brown on edges.

Oatmeal Cookies
- 3/4 cup all purpose flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- pinch of nutmeg
- 1/2 cup (8 TBL) softened margarine
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 1-1/2 cups rolled oats
- 3/4 cup raisins
325 deg. F oven for 22-25 minutes
