Cabbage and Ramen Salad


Dressing:

Mix in bowl and set aside.

Salad:

  1. Boil a chicken thigh, or about a half a boneless, skinless chicken breast, for 1 hour until well done.
  2. Mince chicken meat and discard skin, bones, and fat. Save for later.
  3. Make dressing, stir well in small bowl.
  4. Chop cabbage in large mixing bowl. Add other salad ingredients.
  5. Add dressing, ramen, and chicken meat and toss thoroughly.
  6. Cover with plastic wrap and chill in refrigerator overnight to allow cabbage to "pickle" in the vinegar and salt. Serve.
