Cabbage and Ramen Salad
Dressing:
- 1/2 cup olive oil
- 2 TBL sugar
- 2 TBL vinegar
- 1 tsp salt
- 1/2 tsp ground black pepper
Mix in bowl and set aside.
Salad:
- 1/2 head of cabbage, sliced and chopped, not too fine
- 2 green onions (scallions), sliced
- 2 TBL slivered almonds
- about 1/2 cup cooked and minced chicken breast meat
- 1 package ramen noodles, crushed to bits (discard the flavoring
packet)

- Boil a chicken thigh, or about a half a boneless, skinless
chicken breast, for 1 hour until well done.
- Mince chicken meat and discard skin, bones, and fat. Save for
later.
- Make dressing, stir well in small bowl.
- Chop cabbage in large mixing bowl. Add other salad ingredients.
- Add dressing, ramen, and chicken meat and toss thoroughly.
- Cover with plastic wrap and chill in refrigerator overnight to
allow cabbage to "pickle" in the vinegar and salt. Serve.
