Broiled Salmon
- Buy salmon filets, not steaks. Remove pin bones, oil filets
- Cover bottom of broiler pan with aluminum foil (no rack)
- Place salmon on pan, skin side down
- Top with prepared mustard, crushed potato chips or crushed saltine
crackers, dill
- Start broiler
- Broil salmon 1-1/2 minutes
- Remove and turn salmon
- Broil 30-45 seconds until skin bubbles and begins to crisp
- Remove salmon and peel off skin
- Sprinkle with lemon juice, turn over again onto serving plate
