Batters: Fish, Chicken, Pancake


Pancake mix:

		                   small              large

		flour              1/2 cup            2 cups
		baking powder      1/2 tsp            2 tsp
		baking soda        1/4 tsp            1/2 tsp
		salt               1/4 tsp            1/2 tsp
		sugar              1 tsp              2 TBL
		buttermilk powder  3 tsp              4 TBL
		water              1/2 cup            2 cups

Corn Dog Batter or Fish Batter 1:

(Drum sticks: deep fry 8-10 min in 375 deg F oil, finish for 50 min in 300-325 deg F oven on a rack.)

Fish Batter 2:

Dredge with flour before battering.

Dredge with flour before battering.

Fried Chicken Breading:

  1. Oil chicken pieces. Place in large mixing bowl. Sprinkle garlic salt on pieces to begin brining. Place in refrigerator for 15-30 minutes.
  2. Handle chicken pieces with tongs. Sift the dry flour mixture over all pieces, turning pieces to cover evenly. Use about 2 TBL for each coating.
  3. Return bowl to refrigerator and chill for about 15 min.
  4. Repeat sifting and turning chicken pieces each time the spiced flour coating begins looking damp again. Chill between each coating.
  5. Repeat as necessary to build up a thick breading on each piece.

Deep fry drum sticks:
- about 7-8 minutes in 375 deg. F oil
- finish on rack in 300-325 deg. F oven for 20 min.

Deep fry thighs:
- about 9-10 minutes
- finish in oven for about 30 min
